The Fruits of No Labor
If you also found yourself over-indulging throughout the holidays (I couldn’t have been the only one), here’s an ultra-easy snack that’s a snap to put together. The combination has loads of sweet and savory flavor and feels like a little holiday all on its own. It’s so little work you can make it anytime. Recipe note: One large pear is big enough to serve two people for a light lunch.

Ingredients
- One Bosc Pear (or more if you’re making this for a crowd)
- Lemon Juice
- Blue Cheese
- Spinach Leaves
- Thinly Sliced Prosciutto
Instructions
- Slice the pear(s) lengthwise into 8 pieces
- Toss in lemon juice.
- Lay a pear slice at one end of a prosciutto slice, stack a piece of Blue Cheese and a spinach leaf onto it and roll it up in the prosciutto.
